Old Fashioned Lentil and Ham Soup

Serves 8 – approximately 210 calories per serving

Ingredients

1 ham bone or 3 ham hocks

1 pound dried lentils, rinsed

3 cups bite sizes pieces of smoked/cooked ham (preferably cut from the ham bone)

3 tablespoons olive oil

1 large onion small diced

2 carrots small diced carrots

3 celery stalks small diced

3 teaspoons ground coriander

3 teaspoons ground cumin (or ground sage instead of cumin)

2 teaspoons thyme

2 quarts chicken stock

Salt and pepper

Directions

In a large pot, over medium heat, add olive oil. Add diced onions, carrots and celery. Season to taste with salt and pepper. Sauté 3-4 minutes. Add ham bone (cutting bite size pieces of cooked ham off beforehand and reserve) or ham hocks, and chicken stock. Add coriander, cumin and thyme. Bring to a boil and then reduce to simmer for about 1 hour. Add lentils and cook until tender – about a half an hour. Remove from heat and adjust seasonings if needed.
